A low-acid vinegar with a dark, intense, and glossy color; the flavor is deep and full-bodied. The bouquet is complex and persistent, with pronounced balsamic notes. The flavor is robust and harmonious, with distinct fruity notes.
The vinegar is made according to ancient traditional methods, starting with a skilful blend of the finest cooked musts and adding wine vinegar from Tuscan grapes. The must is cooked slowly and for a long time over moderate heat, according to traditional rites. Aged in fine wood barrels, it imparts a rich, balanced aroma and flavor, as well as a high density.
It's an extremely versatile product, excellent for dressing fresh salads, dips, vegetable-based pasta dishes, and risottos. It enhances the flavors of boiled or grilled meats and pairs well with aged cheeses. Its smooth flavor also pairs well with ice cream, creams, and fresh fruit.
